I try to employ "Yes and..." at work and it often works. In other areas of life it works well. After all, you're basically telling somone "I want to play along with you" or "I agree with you" even if that's not what you really want to do. Sure makes the boss happy.
There are times in life, though, when "yes anding" may not be the wisest choice.
"You've been staring at my wife for the last hour, buddy."
"Yes and that Motley Crew t-shirt fits her so well."
"Miss, I need to see your license. You smell like booze."
"Yes, and when I get home, officer, I plan to pound down another six dirty Tequilla Sunrises."
Any others?

Sometimes it's a form of love just to talk to somebody that you have nothing in common with and still be fascinated by their presence.

There is a SMART way to say "Yes, and.." that is supportive and honest -- though I can't really do this on the spot yet, it sould be something like...
"You've been staring at my wife for the last hour, buddy."
"Yes, and wishing that I had a wife like yours."
"Miss, I need to see your liscense. You smell like booze."
"Yes, and I am glad you stopped me because it shows you care about my safety and the safety of others. Can you help me get a ride home?"
Girlfriend: "I feel fat today."
Boyfriend: "Yes, and I feel really lazy today. It must be the weather."
Just saying "yes, and" does NOT work. Instead, you need to be tuned in to what your [___] needs. On stage that may be a set up for some kind of narative conflict. In life, it can be something to build someone up or tear them down.
*GEEKY MOMENT*
Like THE FORCE, it has a DARK SIDE. But if you only use it for GOOD, your power will be much stronger and bring the socially trublent world(s) around you, some inter-gallatic peace.

"Honey, I had fun at the park."
"Yes, and I'm a robot."
ColdTowne had an email discussion about worst initiations a while back. Arthur Simone won the contest with "Hello Elenor Roosevelt. I know you're getting ready to rap about the state capitols, but Hitler wants to listen!"
