First of all, this is a great problem to have. And we haven't had it for long enough or consistently enough that we should have the solutions nailed down yet. Brad and Ann do a great job, but shit happens, and it happens differently every time.
For the record, if you're selling tickets, you set 49 tickets aside. Then you take from that the number of online sales and you set those aside aside. You only sell those tickets.
Improvisers can get a free ticket at show time if there are any available (which there usually are for anything other than Maestro).
