I had my last day at work today and I wanted to celebrate by making a sandwich. Much to my disappointment, I was soooooo totally out of bread. I think my roommate stole it while it was in storage.

I also noticed that my peanut butter was pretty old and almost empty. I haven't checked the jelly yet. This will be a great opportunity for me to switch to a "healthier" perhaps more natural peanut butter.

I decided it was time for me to go to HEB and get to work on this project. I think I'm going to go Sunday. I'll keep you all posted on how it goes. I hope I don't encounter any roadblocks on the way...

UPDATE!!!!

It turns out that my suspicions regarding my roommate and bread-theft was correct. I found a bread(crumb) trail of slices all around his quarters.

I decided to make a run to HEB. The selection was overwhelming!!!! I forgot to do research on which brand I should get.

The old man at Jiffy Lube said that sourdough was really healthy, but this Hispanic gentleman at National Food & Snacks said whole grain was the way to go.

I decided to do some research on this bread I tried at The Enchanted Forest one time with a veggie burger. It's called Ezekiel bread. Here are the ingredients as seen on https://www.foodforlife.com

INGREDIENTS: Organic Sprouted Whole Wheat, Filtered Water, Organic Malted Barley, Organic Sprouted Whole Millet, Organic Sprouted Whole Barley, Organic Sprouted Whole Lentils, Organic Sprouted Whole Soybeans, Organic Sprouted Whole Spelt, Fresh Yeast, Sea Salt.

I ordered some online. I'll let you know when it comes in and how it turns out.

They sell this at Whole Foods, in the frozen bread section. Maybe Central Market too, but definitely Whole Foods.

I got this at Whole Foods once, by accident. It was awful. Your mileage may vary, but, bleaugh.

Jon, I really respect your ambition to tackle a project so expansive in scope. With sandwiches being sold at almost every establishment that food is peddled, it's really hard to judge quality before you buy. And the mark up is HUGE!!! I haven't done the numbers, but I bet you could build 5 or 10 sandwiches for the cost of 1 pre-fabbed meal. Plus you can build it however you want it, you can guarantee the quality (at least to the extent of your skills), and you get the satisfaction of reaping the benefits of all your hard work.

I wish I had the guts to take on a project like this... maybe then I wouldn't be a slave to Subway's Five Dollar Foot long. How did you learn to do this work? Is someone in your family a sandwich maker, or do you have some good resources to recommend? Do you think you'll ever do a SUB SANDWICH project?!?!?!?! I would pay to see that.

My boyfriend works at Thundercloud. I know it's not quite the same model as what you're working on, but he's been in the business for a while, so if you run into any tough spots, feel free to give me questions to pass along to him. Looking forward to your progress!

MY BREAD CAME TODAY!!!!

It took a really long time because I've been busy with other things. But I'm finally ready to take this project to the next level.
